Plate Ribs (Dino Ribs)

Grass-fed Dino Plate Ribs are a beefcut taken from the plate primal of the animal — the lower rib area just below the ribeye section. These ribs are meaty, substantial, and rich in flavor, with more meat and fat attached than typical back ribs. They’re sometimes called plate ribs, cross-ribs, or “dino ribs” because the bones are long and look “giant” or dinosaur-like in scale.
